Ingredients
  

  • For the Cream Layer
  • 1 cup heavy whipping cream cold
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract
  • For the Filling
  • 1 cup crushed pineapple drained slightly, keep some juice
  • ½ cup cream cheese softened or ½ cup condensed milk (for sweeter version)
  • 2 –3 tbsp sugar adjust to taste
  • For Layers
  • 1 cup sponge cake cubes or ladyfingers/biscuits
  • 2 –3 tbsp pineapple juice for soaking
  • Optional Garnish
  • Fresh pineapple chunks
  • Mint leaves
  • Cherry

Equipment

  • Mixing bowls (2–3) – for whipping cream and mixing pineapple filling
  • Hand mixer or whisk – to whip the cream (electric mixer makes it easier)

Method
 

  1. Prepare the Cream
  2. In a chilled bowl, whip the heavy cream until soft peaks form.
  3. Add powdered sugar and vanilla.
  4. Beat until stiff peaks form. Set aside in fridge.
  5. Make Pineapple Mixture
  6. In another bowl, mix:
  7. Crushed pineapple
  8. Cream cheese or condensed milk
  9. Sugar (if needed)
  10. Beat or mix until smooth and slightly creamy.
  11. Prepare Base Layer
  12. Lightly dip sponge cake or biscuits in pineapple juice.
  13. Do not soak too long (avoid sogginess).
  14. Assemble the Parfait
  15. In a glass or jar, layer as follows:

  17. Pineapple mixture
  18. Whipped cream
  19. ➡️Repeat layers 2–3 times.
  20. Final Touch
  21. Top with whipped cream.

Notes

For extra richness, mix a little condensed milk into the whipped cream.
