  • 115 g ½ cup unsalted butter
  • 170 g 6 oz high-quality dark chocolate (60–70% cocoa)
  • 2 large eggs
  • 2 egg yolks
  • ½ cup 100 g granulated sugar
  • ¼ cup 30 g all-purpose flour
  • 1 tsp vanilla extract
  • Pinch of salt
  • Butter & cocoa powder for greasing ramekins

Method
 

  1. Preheat oven to 220°C (425°F).
  2. Prepare ramekins: Butter 4 ramekins thoroughly and dust with cocoa powder. Tap out excess.
  3. Melt chocolate & butter: In a heatproof bowl, melt together over a double boiler or microwave in 20-second intervals. Stir until smooth.
  4. Mix eggs & sugar: In a separate bowl, whisk eggs, egg yolks, and sugar until thick and pale.
  5. Combine: Slowly fold the melted chocolate mixture into the egg mixture.
  6. Add vanilla, salt, and gently fold in flour until just combined (do not overmix).
  7. Fill ramekins: Divide batter evenly into prepared ramekins.
  8. Bake for 10–12 minutes. The edges should be firm but the center soft.
  9. Rest for 1 minute, then carefully invert onto plates.
  10. Serve immediately while warm and molten inside.
