Ingredients
  

  • Ice Cream Layer
  • 8 oz 225g cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup strawberry puree
  • ½ cup sweetened condensed milk
  • Strawberry Crunch Coating
  • 20 Golden Oreo cookies
  • 1 cup freeze-dried strawberries
  • 3 tbsp melted butter
  • Optional Garnish
  • Fresh strawberries
  • White chocolate drizzle
  • Extra cookie crumbs

Equipment

  • Mixing bowl

Method
 

  1. Step 1: Prepare Strawberry Puree
  2. Wash and hull strawberries.
  3. Blend until smooth.
  4. Measure 1 cup puree.
  5. Set aside.
  6. Step 2: Make Cheesecake Filling
  7. Beat softened cream cheese until smooth.
  8. Add powdered sugar.
  9. Mix until creamy.
  10. Stir in vanilla extract.
  11. Step 3: Whip Cream
  12. In a separate bowl whip heavy cream until stiff peaks form.
  13. Fold into cream cheese mixture.
  14. Step 4: Add Strawberry Flavor
  15. Add strawberry puree.
  16. Add sweetened condensed milk.
  17. Fold gently until fully combined.

  18. The mixture should be smooth and pink.
  19. Step 5: Fill Molds
  20. Pour mixture into popsicle molds.

  21. Insert sticks.
  22. Freeze for at least 6 hours or overnight.
  23. Step 6: Make Strawberry Crunch Topping
  24. Pulse Golden Oreos into coarse crumbs.
  25. Add freeze-dried strawberries.
  26. Pulse again.
  27. Mix with melted butter.
  28. The mixture should resemble the crunchy coating shown in the photo.
  29. Step 7: Coat Bars
  30. Remove frozen bars from molds.
  31. Allow to sit 1 minute.
  32. Press strawberry crunch mixture onto all sides.

  33. For extra coverage:
  34. Lightly brush bars with melted white chocolate first.
  35. Then coat with crumbs.
  36. Step 8: Serve
  37. Serve immediately or return to freezer until needed.

Notes

 
  • For the best strawberry flavor, use freeze-dried strawberries in the crunch coating rather than fresh strawberries.
  • Make sure the bars are completely frozen before removing them from the molds to prevent breaking.
  • If the crumb coating does not stick well, lightly brush the bars with melted white chocolate before coating.
  • Golden Oreos provide the classic strawberry shortcake flavor, but vanilla sandwich cookies can also be used.
  • Freeze the coated bars for 15–20 minutes before serving for a firmer texture.
  • Store leftovers in an airtight container in the freezer for up to 2 months.
  • For a richer cheesecake flavor, increase the cream cheese to 10 oz (280g).
  • You can substitute the strawberry puree with raspberry or mixed berry puree for a different flavor variation.
  • To reduce sweetness, use unsweetened whipped cream and decrease the powdered sugar by ¼ cup.
  • Allow bars to sit at room temperature for 2–3 minutes before serving for the creamiest texture.
