  • ¾ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup mini chocolate chips
  • For the Topping:
  • 1 cup mini marshmallows
  • ½ cup chocolate ganache or melted chocolate
  • ½ cup cookie dough pieces or chocolate chunks
  • Extra graham cracker crumbs optional

Method
 

  1. Prepare the Crust:
  2. Preheat oven to 325°F (160°C). Mix graham cracker crumbs, melted butter, and sugar until combined. Press firmly into a pie dish. Bake for 8–10 minutes, then let cool.
  3. Make the Filling:
  4. In a large bowl, beat cream cheese and brown sugar until smooth and creamy. Add eggs one at a time, mixing well after each. Stir in vanilla extract. Fold in chocolate chips.
  5. Bake the Cheesecake:
  6. Pour the filling into the cooled crust. Bake for 35–40 minutes, until the center is set but slightly jiggly. Remove and let cool at room temperature.
  7. Chill:
  8. Refrigerate for at least 2 hours (or overnight for best results).
  9. Add Toppings:
  10. Spread or drizzle chocolate ganache over the top. Add mini marshmallows and lightly toast them with a kitchen torch or broiler. Sprinkle cookie dough pieces and graham crumbs.

  12. Slice and serve chilled for the ultimate gooey, creamy s’mores dessert!
