Ingredients
  

  • For the Crust
  • 2 cups graham cracker crumbs or digestive biscuits
  • ½ cup 115g unsalted butter, melted
  • 2 tbsp brown sugar optional, for extra flavor
  • For the Cheesecake Filling
  • 16 oz 450g cream cheese, softened
  • 1 cup 240ml heavy whipping cream
  • ¾ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup butterscotch sauce store-bought or homemade
  • For the Topping
  • ½ cup butterscotch sauce
  • ¼ cup whipped cream optional
  • Butterscotch chips or crushed cookies optional garnish

Method
 

  1. Prepare the Crust
  2. In a bowl, mix graham cracker crumbs, melted butter, and brown sugar.
  3. Press mixture firmly into the bottom of a lined 8x8-inch pan.
  4. Refrigerate for 15–20 minutes to set.
  5. Make the Filling
  6. Beat cream cheese until smooth and creamy.
  7. Add powdered sugar and vanilla; mix well.
  8. In a separate bowl, whip heavy cream until stiff peaks form.
  9. Fold whipped cream gently into the cream cheese mixture.
  10. Add butterscotch sauce and mix until smooth.
  11. Assemble
  12. Spread cheesecake filling evenly over the chilled crust.
  13. Smooth the top with a spatula.
  14. Chill
  15. Refrigerate for at least 4 hours (overnight is best for firm texture).
  16. Add Topping
  17. Drizzle butterscotch sauce over the top.
  18. Add whipped cream or garnish if desired.
  19. Slice into bars and serve chilled.

  21. ½ cup butter
  22. 1 cup brown sugar
  23. 1 cup heavy cream
  24. Pinch of salt
  25. Steps:
  26. Melt butter and brown sugar together.
  27. Add cream slowly while stirring.
  28. Simmer 3–5 minutes until thickened.
  29. Cool before using.

Notes

Use full-fat cream cheese for a richer texture
Chill overnight for cleaner slices
