Prepare the Crust
Preheat oven to 325°F (160°C).
Mix graham cracker crumbs, sugar, and melted butter.
Press mixture firmly into the bottom of a 9-inch springform pan.
Bake for 8 minutes then let cool.
Make the Cheesecake Filling
Beat cream cheese until smooth.
Add sugar and mix well.
Add eggs one at a time, mixing slowly.
Add sour cream and vanilla extract.
Mix until smooth and creamy.
Bake the Cheesecake
Pour cheesecake batter over the crust.
Bake for 45–50 minutes until center is slightly set.
Turn off oven and let cheesecake cool inside for 1 hour.
Refrigerate for at least 4 hours.
Prepare Strawberry Crunch Topping
Crush golden cookies into small crumbs.
Mix with crushed freeze-dried strawberries.
Add melted butter and mix until crumbly.
Assemble the Cheesecake
Spread strawberry jam on top of chilled cheesecake.
Sprinkle strawberry crunch mixture over the top.
Add fresh strawberries for garnish.
