Prep the Strawberry Yogurt Mixture
In a medium bowl, combine chopped strawberries and Greek yogurt.
Stir in honey or maple syrup if you’d like extra sweetness.
Form the Bites
Line a baking sheet with parchment paper.
Spoon small mounds (about 1 tablespoon each) onto the sheet.
Gently shape into round clusters.
Freeze
Place the tray in the freezer for 1–2 hours, or until completely firm.
Melt the Chocolate
In a microwave-safe bowl, melt chocolate chips with coconut oil in 20–30 second intervals, stirring between each, until smooth.
Dip in Chocolate
Remove yogurt bites from freezer.
Using a fork, dip each bite into melted chocolate, coating fully.
Place back onto parchment paper.
Final Freeze
Return to freezer for 10–15 minutes until chocolate is set.
Storage
Store in an airtight container in the freezer for up to 2 weeks.
Let sit at room temperature for 1–2 minutes before eating for the best texture.
