Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

In a medium bowl, whisk together flour, baking soda, baking powder, and salt.

In a large mixing bowl, cream butter and sugar together until light and fluffy, about 2–3 minutes.

Beat in the egg, egg yolk, lemon juice, lemon zest, vanilla extract, and lemon extract until fully combined.

Gradually mix dry ingredients into wet ingredients until a soft dough forms.

Cover and chill dough for 30 minutes for thicker chewy cookies.

Scoop dough into 1½ tablespoon-sized balls and roll each in granulated sugar.

Place cookies 2 inches apart on prepared baking sheets.

Bake for 10–12 minutes until edges are lightly golden and centers look slightly underbaked.

Allow cookies to cool on baking sheet for 5 minutes before transferring to a cooling rack.
